Grape pomace and wine lees are byproducts of winemaking. Grape pomace is the solid remains of grapes left after crushing and pressing to obtain grape juice and it contains skins, pulp and seeds. Wine lees is the sediment left behind after the young wine is separated out and it contains spent yeast, tartrates and alcohol. We take these byproducts and transform them into innovative natural products and thereby reduce biomass waste that may end up in landfills or as environmental pollutants.
